Abstract


Tujuan dari penelitian ini adalah mengetahui tingkat pengetahuan mahasiswa angkatan 2012 dan angkatan 2013 Manajemen Perhotelan Universitas Kristen Petra berdasarkan standar sanitasi dan higiene serta panduan yang terdapat pada petra codex 1.0 dalam berperilaku sebagai food handler pada penerapan safe food handling. Hasil dalam penelitian ini menunjukkan bahwa terdapat hubungan tingkat pengetahuan dalam berperilaku sebagai food handler yang diukur dari sanitasi dan higiene dan petra codex 1.0 pada penerapan safe food handling pada food product laboratory Manajemen Perhotelan Universitas Kristen Petra

The purpose of this study was to know the level of knowledge of student class 2012 and class of 2013, Hospitality Management, Petra Christian University based on the standard of sanitation and hygiene as well as the guidance of the densest in petra codex 1.0 behave as food handlers on safe food handling application. The results in this study indicate that there is a relationship between the levels of knowledge in the food handler behaves as measured from the sanitation and hygiene and petra codex 1.0 on the application of the Safe food handling in the food product laboratory Hospitality Management Petra Christian University.
