Abstract


Abstrak - Penelitian ini dilakukan untuk mengetahui kesempatan karir chef wanita dan menganalisa hambatan dan kunci sukses yang dialami chef wanita di kitchen hotel bintang 3 dan 4 di Surabaya.

Hasil penelitian diperoleh dengan wawancara kepada beberapa chef dan staff hrd hotel berbintang di Surabaya untuk pengumpulan data yang kemudian diolah dengan teknik kualitatif deskriptif. Hasil yang didapatkan dari penulisan ini bahwa terdapat penghambat chef wanita untuk menduduki jabatan tertinggi, seperti aspek workplace, leadership, dan work life balance. Lalu kunci sukses adalah passion dari wanita itu sendiri. Serta cara mengatasi kendala berkarir dengan cara meningkatkan cooking skill, terus berinovasi dan kreatif, lebih bisa mengontrol perasaan dan harus professional dalam bekerja.

Abstract - This study examine the career opportunity of female chefs and analyzing the obstacles and key success in the kitchen of three and four starred hotels in Surabaya.

The result of this study was obtained through interview of chefs and hr staffs from three and four starred hotels in Surabaya, whereby the data is collected and analysed using descriptive qualitative methodology to obtain the result as following: there are aspects preventing female chefs to achieve the highest position such as workplace, leadership, and work life balance. On the other hand, the passion from the female chef is the key success. In order to solve career difficulities, she needs to continue to improve her cooking skills, continuous innovation and to be creative at the same time, maintaining professionalism and put ther emotion in check.
